Cabrera gana el Concurso de Cocina Creativa de la Gamba Roja de Dénia

Rubén Cabrera, Chef at Hotel Jardines de Nivaria’s La Cúpula Restaurant, located in Costa Adeje (Tenerife), has recently won the first prize in the 4th International Creative Cuisine Competition “Gamba Roja de Dénia”. The Chef, from the Adrián Hoteles hotel group, wowed the judges with his “Tierra de Mar” recipe.

This renowned competition welcomes professional chefs into the Municipal Market of Dénia (Alicante, Spain). Since its conception, this award pays tribute to Dénia’s red shrimp and gives an opportunity for those committed to creative cuisine to establish themselves among the culinary greats.

The panel of judges, headed by renowned 3-Michelin star Chef Quique Dacosta, was formed by José Carlos Capel, Food Critic for the Spanish newspaper El País; Michelin-starred Chefs Pedro Morán and Ricard Camarena; Food Critic Julia Pérez Lozano; Food Writer Jesús Trelis; and Sergio Adelantado, Vice President of the Valencian Academy of Gastronomy.

After winning this prestigious award, Rubén Cabrera explained that his inspiration came from a dish that he cooked last Christmas at his restaurant. Rubén says: “The winning dish is a shrimp stock reduced with a sauce. Additional components included a courgette flower stuffed with tartare, black garlic and asparagus”. The dish was completed with spaghetti, black garlic caviar and some flowers. “A dish that combines both land and sea products”, Rubén added.

A total of 76 chefs took part in the fourth edition of the competition, of whom a total of eight finalists were chosen – some of them with Michelin stars to their names.

Ruben Cabrera, 36, started working in a kitchen from a very young age. He now has over 20 years of experience in five star restaurants and almost 10 years in gourmet eateries. He has staged in Michelin-starred restaurants including Mugaritz (Guipúzcoa), Arzak (San Sebastián) y L’Impératif (Belgium), amongst others.
